Ingredients
- 4 bone-in pork chops (about 1 inch thick)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
- 1/2 cup chicken or vegetable broth
- 1/2 cup dry white wine (or chicken broth)
- 2 tablespoons butter
- Fresh parsley, chopped (for garnish)
Directions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Season the Pork Chops: Pat the pork chops dry with a paper towel, and then season them generously with salt and black pepper. Sprinkle the dried thyme and rosemary evenly over both sides of the chops.
- Sear the Pork Chops: Heat the olive oil in an ovenproof skillet (cast iron works well) over medium-high heat. Once the oil is hot, add the pork chops and sear them for about 3-4 minutes on each side, or until they develop a golden-brown crust. Remove the pork chops from the skillet and set them aside.
- Saute Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds, or until fragrant.
- Deglaze the Skillet: Pour in the white wine (or chicken broth) to deglaze the skillet. Use a wooden spoon to scrape up any browned bits from the bottom of the skillet. Allow the wine to simmer for a couple of minutes until it reduces slightly.
- Add Broth: Pour in the chicken or vegetable broth and return the pork chops to the skillet. Bring the liquid to a gentle simmer.
- Transfer to Oven: Transfer the skillet to the preheated oven and bake for about 15-20 minutes or until the pork chops reach an internal temperature of 145°F (63°C) and are cooked through. The exact time may vary depending on the thickness of the pork chops.
- Finish with Butter: Remove the skillet from the oven, and swirl in the butter to create a silky sauce. Let the pork chops rest in the skillet for a few minutes.
- Serve: Plate the pork chops and spoon some of the pan sauce over them. Garnish with fresh chopped parsley, and serve hot.
